2,000 Island Dressing

This is so good. I think it is similar to a Thousand Island dressing – but WAY better & vegan!!!! You can try this dressing on pretty much anything. Use it as a veggie dip, a dressing for salads & coleslaw, a topping on grilled or sautéed veggies… (you get the point)!

Ingredients:

1 Tbs apple cider vinegar
1-2 tsp white distilled vinegar
1/4 c raw cashews
1-2 Tbs veganaise
S & P to taste
2 Tbs chopped onion
1/2 Tbs paprika
1 Tbs agave
2-3 Tbs water (or just to determine desired consistency.)
1 Tbs Dijon mustard

Directions:

Just throw it all in the food processor and process until creamy. Enjoy that delicious dressing!
