Apple Fritter Pancakes
These were a pleasant surprise. They were not super light & fluffy but were fruity & really amazing. They reminded me of apple fritters- which I love. The pancakes are made with spelt four & are pretty hearty but you could probably switch out your flour and get a fluffier pancake.
Here you go!
Ingredients:
1 c spelt flour
1-2tsp cinnamon
1 1/2 Tbs baking powder
Dash salt
1/4 c raw sugar
1/2 finely diced apple or 1/2c apple sauce
1Tbs apple cider vinegar
1tsp vanilla
1 c milk of choice (I used almond)
2 Tbs melted butter (I used earth balance)
* some chopped nuts would taste good in these too…
Stir together dry ingredients then add wet & mix slightly add 1/2 finely diced or shredded apple and mix until there are no dry clumps left.
Heat a pan to med/med-high & add a bit more butter or use a tiny bit of oil on the pan. Pour batter onto heated pan to make pancakes. Flip when bubbles form.
Serve with fresh fruit, butter & maple syrup.
These freeze well & do great heated as leftovers in the toaster.
