Applesauce Oat Pancakes
I was really wanting some pancakes this morning so I tried this recipe. Honestly, I was looking for a lighter pancake that wasn’t so hearty but if you want a nice, filling breakfast these are the ones for you! My husband said they are like buckwheat pancakes but I’ve never had those! You be the judge 🙂
* update: I had these warmed and toasted in the toaster as leftovers. I topped them with some earth balance and maple syrup & they tasted really good- almost like French toast which I love.
Ingredients:
-6 tbs warm water
– 2 tbs flax
-1 c whole wheat pastry flour
-1/4 c quick oats
-1 tsp baking powder
-1/4 tsp baking soda
-1/2 tsp cinnamon
-1/3 c almond milk
-1/4 c water
-2-3 Tbs melted margarine (like earth balance or coconut spread)
-3/4 c applesauce
Directions:
-mix the warm water and flax with a fork, stirring vigorously until it is more egg like and thickens. Set aside.
– combine the dry ingredients. Set aside.
– add all the wet ingredients to the bowl with your flax “egg” and mix then pour into the dry ingredients, mixing just until moistened.
– drop onto a preheated & pre greased griddle (medium low heat) by about 1/4 c or less. Cook until crispy golden brown on each side.
– store leftovers wrapped in the fridge & reheat in the toaster.
