Black Beans and Rice Ensalada
This is what I fix when I’m in a pinch for time and I need a hot meal quick. It’s fast, easy, and really yummy.
Directions:
bag/box of black beans & rice (be sure it’s vegan).
2 tomatoes chopped
1 c chopped fresh cilantro
2 med soft avocados ( just hard enough to keep shape and not mush)
1 red or white onions finely chopped
Optional garnish:
Tortillas or plantains on the side or top with olive oil, red vinegar, sliced fresh mushrooms, jalapeño, chopped lettuce, or anything else that sounds good to you- be creative!
Prepare the black beans and rice as directed on packaging.
Serve topped with all other ingredients of your choice.
*recipe is also good made with red beans and rice or any other bag of quick rice topped with a can of beans.
