Black Eyed Peas
These black eyed peas are really yummy and can be made to be thick and creamy.
These beans are perfect for the lucky part of your New Years dinner or any other time of the year!
Ingredients:
1 lb bag black eye peas
1 veggie base/ bouillon cube
2 Tbs olive oil
S & P to taste
1 chopped onion
1 Tbs garlic from the jar or 1 clove fresh garlic
4-7 drops liquid smoke
1-2 Tsp brown sugar
1 tsp molasses
Pinch cinnamon
Hot sauce is optional
Directions:
– sauté the garlic, onion, and oil in a stock pot until soft & translucent.
– add 2 cups of water and the veggie base, stir until dissolved.
– drop in the beans and bring to a boil.
– season with S & P
– add the rest of the ingredients and simmer for 2-3 hours. This cooking time will make a very creamy batch of beans- shorten cooking time if you don’t want the beans to be very creamy.
