Cauliflower Mash
Last night I didn’t have anything planned for dinner and we were already getting hungry around here. Luckily, I had a TON of veggies chopped up and ready for eating in the fridge.
We had been smacking on raw veggies throughout the day & that wasn’t going to cut it for dinner…
I quickly steamed some broccoli, roasted some bell peppers, cherry tomatoes, and mushrooms, and the star of the show was this delicious cauliflower mash.
Here’s what I did:
Ingredients:
1 1/2 c chopped up cauliflower
1 large carrot (I already had it washed and cut into sticks)
1 stalk celery (I already had it washed and cut into sticks)
1 tsp olive oil
2 Tbs chopped onion
1/2 c veggie stock
1 tsp paprika
Dash of cayenne pepper (to taste)
Dash of salt and pepper to taste
1/2 Tbs Earth Balance
Directions:
-Get some water boiling and steam the cauliflower, carrots, and celery in the pot ( or use any other steaming method you prefer)
-While the veggies are steaming sauté onions with oil in a small pan until they are translucent.
-When the veggies are steamed allow to cool for just a moment- the onions also, then throw into the food processor or vitamix.
-Throw the rest of the ingredients in too.
-Pulse/ blend until everything is combined to one color or the texture you like.
-Serve warm or reheat when ready to serve.
We sprinkled some pepper and nutritional yeast on ours last night and that was yummy.
Makes about 4 side servings.
