Chorizo Quesadillas
Oh man! I found some Tofurkey brand chorizo crumbles and I was like oh yeah! So I bought 2 boxes (threw one in the freezer) and I made some quesadillas! You will really enjoy these!
Ingredients:
– tortillas
– cooking spray
-beans (I used pinto – drained & rinsed)
-vegan chorizo crumbles
– vegan cheese (optional) I used a very small amount of Daiya cheddar style shreds
-salsa
-finely diced onion
Other ideas:
– black beans, jalapeño, avocado, bell peppers, mushrooms, vegan sour cream, etc!
Directions:
– heat a large frying pan on the stove.
– spread ingredients onto half of the tortilla (I did 2 Tbs chorizo, mashed about 2 Tbs pinto beans into that, sprinkled 1 Tbs diced onion, 1 Tbs cheese, and 1 Tbs salsa) then fold in half and place in frying pan.
– cook until golden brown then flip & cook the other side until golden.
– cut into triangles & serve with guacamole, sour cream, salsa, & cilantro.
