Cinnamon Raisin Bread Pudding
These bread pudding pictures really don’t do this delicious treat any justice. I’ve got to tell you, this is so delicious. If you like things that are sweet, creamy, and delicious, then you should really try this out!
Ingredients:
2 – 2 1/2 c cut up bread ( I used a half a loaf of crock pot bread I made in the morning and cut it into cubes)
2 c almond milk
2 1/2 Tbs corn starch
1-3 Tbs white sugar (to taste really)
2 Tbs pure maple syrup
1 tsp vanilla extract
2 Tbs Earth Balance
1/4 c raisins
1/2- 1 tsp cinnamon
Directions:
-Preheat oven to 350 degrees.
-cut bread into cubes and dry out, browning tips slightly, in the oven (about 10 mins)
-meanwhile, get a small baking dish or 4 ramekins and spray with oil.
– put the bread cubes in the dish and sprinkle the raisins over the top.
– add the milk, sugar, corn starch, vanilla, and maple syrup to a sauce pan. Stir until the corn starch dissolves.
– heat on medium heat until the mixture gets thicker. Stir frequently at this step to keep from burning and lumps from forming. (I used a whisk).
– stir in the Earth Balance
– pour this over the bread and raisins
– sprinkle cinnamon on top.
– bake 30-40 mins until the bread is a little crunchy on top and the liquid is thick like custard.
-serve right away for a warm and gooey chewy treat or refrigerate and serve chilled.
* Add in ideas dark rum, dark chocolate, nuts, bananas, or berries.
