Cookie Cake

This recipe is for vegan cookie cake heaven. You can get as colorful & creative with cookie decorating as you want. Or you can just keep the cookie plain & it’s still amazing. Be sure and mix the cookie up the day before you want to bake it.

3/4 c vegan margarine
3/4 c granulated sugar
1-2 Tbs molasses
1 flax egg (3 Tbs water mixed with 1 Tbs ground flax- then allow to thicken for 10 mins prior to using in the batter)
2-3 tsp vanilla extract
2 c flour of choice (I used all purpose)
Dash salt (like 1/4 tsp)
2 tsp corn starch
1 tsp baking soda
1/2 c mini chocolate chips (use vegan!) * any size is fine but I like the minis
* optional* 1/4 c chopped nuts (such as pecans or walnuts)

Directions:
-Put the first 3 ingredients into a stand mixer and mix until creamy- about 3-5 mins.
-add the flax egg & vanilla extract
– beat mix until combined
– mix all dry ingredients in a separate bowl (not the nuts or chocolate chips.)
– add the dry ingredients to the wet ones in the mixer a little at a time. Have the mixer on low.
– when all is combined toss in the chocolate chips and nuts, stir until they are going throughout the dough.

(At this point you could eat the dough!)

Press the dough evenly into a 9 or 12 inch spring form pan, cover with plastic wrap and put in the fridge over night.

The next day, preheat the oven to 350 degrees and bake until golden brown (about 30 mins)

Decorate with your favorite vegan frosting & sprinkles.
