Cornbread Dressing
Y’all 😉 this is a great cornbread dressing (pudding, stuffing, whatever you like to call it!) recipe.
This is traditional and just like your mammie used to make it. It’s like grandma’s y’all!
Here it is:
Ingredients:
– 6 Tbs warm water
-2 Tbs ground flax
– 3 cups crumbled cornbread – use my recipe- it’s perfect for this : https://www.artsyvegan.com/like-lalas-cornbre
– 3 Tbs earth balance ( or any non hydrogenated butter)
– 3 Tbs olive oil
– 1 diced onion
– 1/4 c mixed bell pepper chopped
– 1/4 c shredded carrots (optional)
-3 celery stalks chopped
-2 c veggie broth
– 1-2 Tbs dried sage (or to taste)
– salt & pepper to taste
-paprika to taste
Directions:
– preheat oven to 350 degrees
-heat the butter & oil in a large pan
– add all the veggies and cook until soft
– mix the 6 Tbs warm water & flax until thickened. ( that’s your flax egg!) Set aside.
-put the crumbled cornbread into a large bowl. Dump in the veggies, the veggie stock, the flax ‘egg’, and all the spices.
– mix just until moistened (I used my hand for this to be sure not to over mix.
– transfer to a prepared (sprayed or oiled) casserole dish and bake 30-50 mins. (Until browned on top)
