Fiesta Nachos!
So we’ve been finishing up this pot of Nacho Papa’s Bean Chili that I made this week. First, we did the carrot dogs (vegan hot dogs), then the hot dog party, now the nachos!
I’m calling these fiesta nachos because all the colors of the chopped veggies reminds me of confetti and parties…plus, it’s the perfect food for a party.
These are the same nachos I posted before, just with different colored chips and other veggies.
Ingredients- all to taste:
-blue corn chips
-nacho papas bean chili
-chopped onion
-chopped bell peppers (all colors!)
-sliced mushrooms
-sliced, pickled jalapeños
– classic cole slaw
-fresh chopped avocado
Directions:
Preheat the oven to 400 degrees
– line a pan with foil and spread chips all on the foil.
-top chips with chili ( I just drop by spoonfuls to be sure that every chip has a little bit of chili)
– add the chopped veggies and jalapeños then bake in the oven for about 15-20 mins
– top with cole slaw and avocado & enjoy!
