Maple bourbon bread pudding

My husband is from New Orleans and he said this is the best bread pudding he’s ever had! I must agree, it is good! And vegan! Yay!

I’ll be serving this for Mardi Gras this year. It would also be good as a super delicious French toast bake for breakfast or brunch!

I used maple crown royal but you can sub any brandy or bourbon or leave the liquor out of the sauce all together if you want.

Ingredients:
– 1 day old French loaf cut into cubes
-1/2 c raisins
-1 1/2c almond milk
-1 can full fat coconut milk
-1/4 c pure maple syrup
-1/4 c brown sugar (or natural sugar + 1 tsp molasses)
-1 Tbs ener-g egg replacer
-2 tsp vanilla extract
-1 tsp cinnamon
-1/2 tsp nutmeg
– 1/4 tsp salt

For the sauce:
-2 Tbs earth balance butter
-1/8 c almond milk
-1/4c maple syrup

+ 1tsp corn starch mixed with 1/8 c almond milk

And 1 shot (+/- to taste) maple crown royal

+Chopped pecans

Directions:
-preheat oven to 350F
-prepare a 9×9 pan with some oil or butter (9×9 makes thick, traditional style. You can use a larger pan to have a thinner, more crunchy bread pudding which is also good.)
-put cut bread and raisins in a large bowl
-put all the other ingredients into the food processor or blender & combine
-pour into bread and raisins & stir gently to coat all the bread let sit for a couple minutes to absorb all the liquid.
-pour pudding mixture into your prepared pan.
-bake in the oven for 45-50 minutes or until the tops of the bread cubes are slightly browned & crispy.

Meanwhile, prepare your sauce:
– melt butter, maple syrup & almond milk in a small saucepan.
– while the butter is melting mix up your corn starch & additional 1/8c almond milk (set aside)
-heat sauce pan to boil stirring often then reduce to simmer & reduce about 1/2 way.
-add the milk & acorn starch and heat until the sauce thickens (it should just take a couple minutes)
-add the liquor a little bit at a time until it tastes how you like (or leave it out)
-then stir in the nuts

*when the pudding is done cut into squares & serve warm with the sauce drizzled on top. Add some delicious ice cream to make it a la mode if it pleases you (& a maple almond over ice too!)
