Mediterranean Sandwich
Today, my husband & I took our 5 month old to the HIGH museum of art in Atlanta to see the Frida y Diego exhibit. We knew we wouldn’t want any cheesy meaty meals from the museum cafe and we wanted to pack a ‘picnic’ lunch anyway- so I made a loaf of crock pot bread and used some leftovers from our fridge…
Ingredients:
– sliced bread
– baby spinach leaves
– hummus ( I used Dan’s hummus recipe)
– roasted bell peppers (sliced)
– tomatoes (sliced- but I used my leftover roasted cherry tomatoes from the night before.)
– cucumber thinly sliced
– kalamata olives
– red onion (optional & thinly sliced)
– s & p to taste (optional)
Directions:
Smear the hummus on pile the veggies on- you know how to make a sandwich! You may need a toothpick to keep it all together! Another great idea is to serve these in wraps or pita pockets to keep all your delicious veggies from sliding out. We did pretty well with our sandwiches though 🙂
