Potato Salad
This is my basic potato salad recipe. It’s creamy, which is the type I grew up with, and it is very flavorful with all the delicious bell peppers, onions, and spices. This is the perfect dish for a pot luck, bar b q, cookout, picnic, Easter lunch, or just as a side dish with dinner.
Ingredients:
-8 red potatoes, peeled, and cut into large chunks (it isn’t necessary to peel these potatoes but I prefer mine without the skin.)
-one cube veggie bullion
– 1 tsp paprika
– tony Chacheries
3/4-1c veganaise
2-3 Tbs Dijon mustard
1/3 c chopped parsley (loosely measured)
1 red bell pepper finely chopped
1 green bell pepper finely chopped
4 stalks celery finely chopped
1/4 c chopped green onions
-salt and pepper to taste
Directions:
– put potatoes in a large pot and cover with water.
– toss in the bullion cube and bring to a boil- boil for 10 mins then drain and allow to cool
– mix together the veganaise, paprika, tony Chacheries, mustard, and parsley
– once potatoes have cooled add the bell peppers and onions, then the dressing & mix together gently.
– add salt and pepper to your liking and give one last stir
This potato salad is even better the next day! Just cover and store in your refrigerator.
