Tasty, Tropical Salad
I fixed this super tasty salad for lunch today for my husband & I to enjoy. And we REALLY enjoyed it! I served some black beans and plantains,from last night’s dinner, along side of this salad- for a tropical flavor!
The veggies in this salad are all optional but here is a starting point for a really scrumptious salad!
Ingredients:
– frozen tofu (defrosted and pressed between 2 dish towels to wring out all the water. This just makes the tofu a little drier, but you could skip this step if you are short on time.)
– olive oil
– Tony Chachere’s
-paprika
– S & P
-chopped lettuce
– shredded carrots
-shredded purple cabage
– diced tomatoes
– chopped broccoli
– diced cucumber
– pineapple bits
– sunflower seeds
-chopped red bell pepper
Directions:
-prepare the tofu and all the veggies
– heat oil in a large skillet and cook tofu until golden. Season with spices then set aside to cool.
– meanwhile, pile veggies high on a plate then top with tofu crumbles, seeds, and pineapple.
Serve with olive oil and vinegar.
*I put some of my black beans on my salad and it was so good!
