Vegan Black Bean Brownies
These are delicious, flour less brownies. I almost called them vegan chocolate soufflé because the texture is definitely along the lines of a soufflé. Anyway, they are good and easy with a food processor. These brownies are super rich & decadent.
Ingredients:
-1 15oz can black beans- drained & rinsed well
-3 tsp Ener-G egg replacer powder (or 2 flax eggs)
-6 Tbs hot water
-1 (or 2) Tbs vegetable oil
-1/2 c cocoa powder (I used dark)
-dash salt
-1 tsp vanilla extract
– 1/3-1/2 c raw sugar
-1 tsp baking powder
-1/2 c dark chocolate chips
– small squirt of agave on top of each (about 1/4 tsp)
-sprinkle of chocolate chips or powder sugar on top
-spray oil
Directions:
-preheat oven to 350 degrees F
-put Ener-g egg replacer and hot water in food processor & pulse until frothy
-add black beans and process until very smooth
-add the oil, sugar, vanilla, cocoa, baking powder, and dash of salt and process until smooth and blended
-and chocolate chips and pulse once or twice
– oil spray 12 regular size muffin tin spots and divide brownie batter evenly among them
-add squirt of agave to all of the brownies and do a slight stir them top with sprinkling of chocolate chips
-bake for 20 minutes (or 30) just until the edges slightly pull away from the tins.
-allow to cool in pan then remove & eat!
