Vegan Chocolate Pudding Pie (or Mud Pie)
My Aunt Sheri said she loved this pie. She says its even better than one of her favorite desserts at her favorite restaurants (not vegan). I made this for her birthday and it was jus amazing. Everyone there was non- vegan and they loved it!
Today I made the pie with Oreo style cookies but I’ve also made it with just chocolate shavings on top instead.
Ingredients:
-1 prepared chocolate cookie pie crust (Kroger sells a vegan one)
– 1 pack silken tofu
-2 Tbs dark agave
-1 tsp cocoa powder
-1/3 c dark chocolate chips
-hard cream from can of coconut milk out of the fridge + 2 Tbs of the liquid from the can (reserve the rest for homemade vega ice cream or another recipe)
– optional for top garnish, Oreo style cookies, chocolate shavings, coconut shreds,cinnamon, cocoa powder, raspberry preserves, Mariachino cherries, etc.
Directions:
– put the tofu, agave, cocoa powder, and 2 Tbs coconut liquid into a food processor
– melt the chocolate chips in the microwave 30 seconds at a time – stirring in between and pour into the food processor when melted
-process until everything turns to one color- a light brown.
– transfer tofu mix to the inside of the pie crust (my husband wanted cookie crumbs at the bottom so I put those inside the crust first)
-make the top of the pie flat with the back of a spoon & set aside
– put the hard white coconut, from the refrigerated can, into a mixer and mix until fluffy (add 1-4 Tbs powder sugar, cinnamon, or some vanilla to this if you like)
– smear on the top of the tofu and top with your garnish of choice (I used cookie crumbs this time)
– chill for at lead a couple hours but its really best overnight.
