Vegan Spicy Mac N Cheeze: Katie Bush Post

*Here’s a recipe from my dear friend, Katie Bush.  She sent some of these to me a while back and I’m just now getting them up!  All you Katie Bush fans, ENJOY!

‘This spicy “mac n cheeze” is to die for and it’s super healthy for you!

Note: Cashews aren’t fully considered “raw” because of the way that they are deshelled. If you want your meal to be completely raw, seek out truly raw cashews.

You’ll need:

2 Zucchini

1 Cup of Cashews

1/2 of a Lemon

2 tbsp Yellow Onion

Sriracha (to taste)

 

Soak the cashews in water overnight.

 

Empty the water and rinse the cashews. Put the cashews, lemon juice, yellow onion, and sriracha into a blender or food processor and run until creamy and thick.

Spiralize the zucchini.

Put the “cheeze” sauce on top of the zucchini and mix well.
