Vegan Turkeyless Pinwheels
Take these to your next holiday party this year
Ingredients:
-large tortillas (we like the spinach and sundries tomatoes ones for added color. There are also good gluten free options available now.
– meatless turkey deli slices or your favorite tofu / seitan / meat substitute sliced thin
-one tub vegan cream cheese (you could also make your own cream cheese with soaked cashews and some lemon juice blended in your blender to make a paste)
– dried cranberries
-kale removed from stalk, torn & massaged with some lemon juice, olive oil, salt & pepper & a little agave or maple syrup (to taste- add a little of everything at a time until it is the taste you prefer)
-chopped walnuts or pecans(optional)
-shredded carrots (optional but add nice color)
Cream cheese seasoning blend options: sweet or savory- choose what sounds best.
-sweeten your cream cheese with maple syrup, the cranberries, and some cinnamon or nutmeg, and your walnuts or pecans
-OR mix up your cream cheese with chives and garlic you can use dried or fresh, you could use chopped green onions or fresh rosemary (finely chopped). Basically any delicious dried or fresh herbs you want.
Directions:
Assemble- (like making a pizza)
-lay out some tortillas and spread your cream cheese mixture all the way on one side of your tortillas, until you have no more cream cheese mixture (should be able to use like 5-6 tortillas with the cream cheese)
-sprinkle with cranberries (if not already in cream cheese – or add more!), kale, and sliced turkey substitute of choice, sprinkle nuts if you like, and sprinkle more herbs & seasoning over everything if you desire! Sprinkle shredded carrots if using.
-roll each tortilla from one end to the next (like a jelly roll or sushi roll) then place in the fridge for at least one hour (to firm up) or until ready to slice
-slice 3/4-1 inch thick and serve on a platter!
