Vegetable crock pot soup
This is very easy and keeps things nice and cool during the summer. It’s best to get a lot of this from your local farmers market for a fresh soup.
Ingredients:
-1Tbs olive oil (optional)
– 1 onion chopped
– 3-4 celery stalks chopped
-1 zucchini chopped
-1-2 yellow squash chopped
– 1-3 carrots diced
– 1-2 c cauliflower chopped
-1/3 c split peas or fresh peas
-1 can red kidney beans drained & rinsed
-2 cans chick peas drained & rinsed
-1 16oz can chopped tomatoes with juice
– 1 can corn with juice
(or 2 corn cut fresh off the cobb.)
-4 c veggie broth
– salt & pepper to taste
-1-2 bay leaves
Directions:
– throw it all in the crock pot
– cook on high for 5 hrs or on low over night
* this soup would taste great with some fresh herbs added in such as dill or parsley
