Veggie mash
This is an easy side dish that tastes great with anything.
Ingredients:
– 3 parsnips
-1 c baby carrots
– 1 1/2 c cauliflower
– 1/4 c veggie stock
– salt, pepper, & paprika to taste
Directions:
-clean and cut your veggies into 2 inch chunks or so)
– get some water boiling and put veggies into a steam basket- cover and steam for 15 minutes or until all the veggies are fork tender.
– transfer to a food processor and add the veggie stock
– pulse until the texture is as creamy as you want
– season as you like and serve along side whatever you want.
For leftovers, put into a sprayed baking dish, top with some of your favorite seasonings and bake, covered, for 30 minutes.
